How to produce
I don’t know if you can make such wooden tables yourself, but wooden materials are bought. You can choose from several types of wood: cedar, ash … Tables must be soaked in water before cooking: at least 2 hours, but I suggest soaking longer – up to 8 hours. The longer you soak, the stronger the smoky flavor of the food you cook. By the way, tables can be soaked necessarily in water, but, for example, in white or red wine! Every time you cook, you get something different.
Tables can be used several times – after a few cookings, they simply burn out … If you cook food on the tables using direct fire, the tables burn faster and you can use them 2 times … However, food cooked in this way has a strong smell of smoke. But if you use a convector for baking (special ceramic cover Kamado style grills), this table serves 4-5 or more times. True, the taste of smoke is a little weak.
Dry the used boards, put them in a plastic bag so that they do not dirty other things and do not get dirty themselves, and keep them until you need them for the next baking. Even if you use tablecloths, soak them again before cooking and wipe off any leftover food residue. If you apply the glaze while cooking, it will run off and stick to the tables, so it’s a good idea to play with the glaze not on new tables, but on used tables.
It is best to grill fish and meat steaks on the tables.
After installing the grill, when the temperature has already reached the desired temperature (I usually heat it up to 200 degrees), first heat the tables themselves for 3-4 minutes on the grill. Don’t panic when smoke starts to pour from the grill and the tables start to crack: they’ve been soaked in water for several hours! Then turn the tables and immediately place the ready-to-cook food on them. It is best to grill fish and meat steaks on the tables. Place the fish with the skin on, it will probably stick to the wood during cooking, but you can easily remove it after cooking. It is enough to sprinkle the fish with salt and pepper, you can sprinkle a little lemon juice.
And if you decide to treat yourself to a more festive meal, prepare salmon steaks and coat them with a honey glaze. I served this steak with baked fresh potatoes, roasted asparagus, half and roasted head of garlic, and roasted spinach and beetroot.
1. Mix all the glaze ingredients and set aside.
2. After heating the grill on one side of the board and browning (as described above), flip the boards over to the other side, brush them with a little oil and place the salmon steaks skin side down. Sprinkle with salt and pepper and spread the glaze generously.
3. Close the grill lid and cook for about 12-15 minutes (depending on the size and thickness of the fish pieces).
4. Remove from tables, garnish with sprigs of fresh thyme and serve immediately with your favorite vegetables.
