Which pasta do you prefer?

This is everyone’s favorite tagliatelle, a sheet, thin pasta that boils for 1-2 minutes. These noodles are of high quality as they are made from egg yolks. Cold spaghetti absorbs the sauce well, better than regular spaghetti. These are fabulous, very tasty pastas. We also make colored pasta with beetroot or spinach puree. Kids especially love this type of pasta and parents are happy that kids get vegetables with this pasta.

What sauces should go with certain pastas?

Tagliatelle can be eaten with pesto sauce. If you come to Bologna and say you want spaghetti bolognese sauce, they get very angry because it’s a heavy sauce. Such sauces should be combined with very light pasta. Combine spaghetti with oily, thick tomato and cream sauces. Tube shaped noodles are very tasty because the sauce stays in them. Mushroom sauce goes well with fried spaghetti. The pasta soaks up this sauce and is very tasty and juicy.

How much water should be added while cooking pasta?

The most important thing is to pour enough water. It is recommended to add 1 liter of water per 100 grams of pasta. Maybe we don’t measure exactly at home, but since there is a lot of water from the noodles it’s important that they have somewhere to swim and spread. It’s a myth that you have to add oil while cooking. This can actually make the situation worse, because the pasta will be covered with it and the sauce will no longer absorb. Another thing, the noodles settle at the bottom and the oil floats to the top and doesn’t reach them. Salt should be added so that the water is sea water salty, because flour likes salt. 2 L of water – 1 full spoon of salt. Pasta is not potato, it does not absorb salt, it just tastes better, becomes more crispy and does not stick together. Place pasta in boiling water. The most important thing is to read the labels, because each manufacturer sets production requirements. If you need to cook the pasta for 3-4 minutes, but you are going to boil it in the sauce, cook it a minute less. Don’t forget to mix. Do not pour cold water over cooked pasta, as the taste will disappear and the pasta will cool quickly.
